It was in a more manageable sized package at Costco, so I grabbed it instead of our usual salmon and spent about 27 seconds looking for a recipe.  Allrecipes came through!  It was easy, quick, and we’ll definitely do it again – enjoy!

Honey Steelhead Trout

2, full -length steelhead trout fillets, skin on – washed and patted dry

~1/4 c. honey

2 T. mesquite seasoning or your favorite barbecue rub

1 t. EACH Lawry’s seasoned salt AND freshly ground pepper

Preheat the oven to 450 and line a large baking sheet with foil.  Place the trout skin side down and drizzle lightly and evenly all over with honey, then sprinkle on the seasonings as evenly as possible.

Bake for 15 to 20 minutes until the fish flakes easily with a fork – and don’t worry about the skin, it will stick to the foil and the fish itself is easy to serve using a pancake flipper.  We enjoyed ours right out of the oven with a quick asparagus risotto.
