Granola (Seeds and Olive Oil)

Description

I found this in Sara Forte’s newest book, ‘The Sprouted Kitchen, Bowl + Spoon’, and it’s another yummy one.  I rotate through granola recipes, so it’s really tough to say which is our favorite!  Below is my doubled version – enjoy!


Ingredients

Scale

Granola (Seeds and Olive Oil)

3/4 c. olive oil

1 1/3 c. maple syrup

1 t. EACH salt AND cardamom

2 t. cinnamon

7 c. large flake oatmeal

4 c. brown rice crisp cereal

1 c. raw pepitas (pumpkin seeds)

2 c. raw sunflower seeds

3 T. EACH chia AND flax seeds (or hemp or sesame or a mix)


Instructions

Preheat the oven to 325 and lightly oil a large baking sheet (or 2, whatever works for you).  In a large bowl, whisk together the olive oil, maple syrup and 3 spices, then add in the remaining ingredients and use a large spatula to combine and coat as well as you can.  Spread the mixture evenly onto your baking sheet(s) and bake for about 45 minutes, stirring every 15 minutes, until the mix is toasty, lightly browned and crisp.  Allow the granola to cool completely in the pan(s), then break it up with your hands and store in an airtight container.
