Boursin and Roasted Tomato Pasta

I realize this has likely been done before, by many people, but its’s fast, flexible, and entirely what we all need on a crazy weeknight!  Also a brilliant way to use up a lot of vegetable bits, below is my outline – enjoy!


Ingredients

Scale

1 box (454 g) your favorite pasta

1 or 2 package(s) (150 g)  Boursin Cheese – we always choose the original

3 c. cherry or grape tomatoes AND a couple of handfuls of any other vegetables you need to use up – spinach is well loved in our house

chopped onion if you wish


Instructions

Start a big pot of salted water to boil and preheat the oven to 400.  Cover a big cookie sheet with parchment and pour on the rinsed tomatoes – spray them with olive oil, give them a shake and spray them again, followed by a good sprinkling of salt and pepper.

Roast the tomatoes for about 20 minutes, until they are just starting to burst, meanwhile, cook the pasta according to directions.  Try to time it so that you are draining the pasta just as the tomatoes are done, and reserve some of the hot pasta water.  Put the pasta back into the warm pot.  Alternatively, you can skip roasting if you’re short on time and sauté a bit of onion, add in the tomatoes (and any other vegetables), but again, time these to coincide with the pasta being ready.

There are a variety of ways of doing this but it’s fastest to add the pasta to the cooked vegetables if you sautéed them or the roasted vegetables to the pasta pot.  Add the Boursin straight away and a titch of hot pasta water if the mix needs a bit of help in the saucy department.  Serve up in big bowls and enjoy your fancy (super fast) meal!
